Creamy Cashew Pink Pasta

  • 1 cup cashews
  • 3/4 cup water
  • 1 clove garlic minced
  • 1 small beet
  • salt & pepper
  • 6 oz chickpea pasta


  • lemon zest
  • parsley


  1. Soak the cashews in water for two hours. Do not soak over night. 

  2. Drain the cashews and add them to a food processor.

  3. Add the minced garlic to the food processor

  4. Shred the beets and add to the food processor. 

  5. Blend on high until creamy and smooth. Add salt and pepper to taste. 

  6. Cook the pasta according to instructions on the box. Cooking times may vary depending on what chickpea pasta (or regular pasta you use) 

  7. Add 2 tbsp of sauce to the pasta and mix together.

  8. Zest with lemon and chopped parsley.
