Coffee Ice Cream Cake

Why choose between ice cream and cake on your birthday? You deserve both!

  • 1 brownie recipe
  • 1 pint coffee ice cream


  • chocolate covered espresso beans


  1. Make the brownie according to the recipe. I made my brownie in a 9"x9" round. After it cooled. I traced the bottom of 7" springform pan and then placed the brownie circle in the pan. 

  2. Let the coffee ice cream cake sit out for 10 to 15 minutes. 

  3. When it is soft, dump the ice cream, on the brown in the springform pan. Smooth until the ice cream reaches the top of the pan. You will probably not need the entire pint. 

  4. If you choose. Add the chocolate covered espresso beans in a circular pattern on top of the ice cream. 

  5. Put the cake back into the freezer for at least an hour to firm up.

I used Sally's Brownie Recipe:https://sallysbakingaddiction.com/2014/04/30/chewy-fudgy-homemade-brownies/ (no frosting).  I made it in a 9x9" square and then cut the brownie to fit into my 7" round. That also means lot of extra brownie pieces!
