Apricot Blackberry Brie Grilled Cheese

Summer grilled cheese? yes please!

  • 2 slices sourdough, cut thick
  • 1 tbsp apricot jam
  • 1 oz brie
  • 1/2 apricot
  • 1/4 cup blackberries
  • 1 handful arugula
  • Cook spray


  1. Lightly toast two slices of bread.

  2. Spread jam on both sides of the bread.

  3. Add brie, apricots, and blackberries to one piece of bread. 

  4. Spray a pan with cooking spray but both pieces of bread on the pan. One with the cheese/fruit, one without. 

  5. After 3-4 minutes, add the top slice of bread to the sandwich. 

  6. Use a spatula to press down on the sandwich to help the cheese melt. 

  7. After 3-4 minutes, very gingerly, flip the sandwich. 

  8. Cook for another 3-4 minutes. 

  9. Stuff in some Arugula. 

  10. Slice in half and enjoy the ooey gooey cheese.
