Red White and Blueberry Pancakes

the perfect pancake for all your red white and blue holiday needs!

  • 1 cup AP flour (or 1/2 1/2 white and whole wheat flour)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1 tbsp sugar
  • 1 tbsp olive oil
  • 1 cup low-fat buttermilk
  • 1 tsp vanilla
  • 1/2 cup blueberries fresh or frozen
  • 1 cup sliced strawberries fresh or frozen
  • 2 tbso white chocolate chips
  • Cooking Spray


  • maple syrup


  1. Add the flour, baking soda, and salt into a large bowl, mix until incorporated. 

  2. Add the egg, sugar, oil, buttermilk, and vanilla into a separate bowl. Whisk until well combined. 

  3. Slowly pour the wet into the dry ingredients. Mix until combined. 

  4. Add the blueberries, strawberries, and white chocolate chips. Stir until just incorporated. 

  5. Hear a medium to large skillet to medium. Spray with Cooking Spray. 

  6. Add 1-2 tbsp of batter to the skillet for each pancake. Cook for about 3-5 minutes on each side. 

  7. Optional: serve with maple syrup.
