Kiwi Avocado Mango Salsa

there is never a bad time of year to eat chips and salsa!

  • 2 kiwis
  • 1 champagne mango
  • 1 small avocado
  • 2 tbsp red onions
  • 1 lime
  • 3 purple potatoes
  • salt
  • pepper


  1. Peel the skin off the kiwi. Dice into small pieces. 

  2. Cut the mango and slice into small pieces. 

  3. Dice a small avocado. 

  4. Dice a red onion into 2 TBSP. 

  5. Add the first four ingredients to a bowl. Squeeze the juice of the lime into the bowl and mix well. Place in the fridge while you make the chips. 

  6. Wash the potatoes. Use a mandolin on the second setting to thinly slice the potatoes. 

  7. Place the potatoes in a bowl of cold water to remove some of the starch. 

  8. Wipe the potatoes dry and place on plate with a paper towels. Sprinkle salt on the potatoes. 

  9. Put in the microwave for 2 and a half minutes, you will have to adjust the time based on the thickness of the potatoes and the strength of the microwave.
