Peel the skin off the kiwi. Dice into small pieces.
Cut the mango and slice into small pieces.
Dice a small avocado.
Dice a red onion into 2 TBSP.
Add the first four ingredients to a bowl. Squeeze the juice of the lime into the bowl and mix well. Place in the fridge while you make the chips.
Wash the potatoes. Use a mandolin on the second setting to thinly slice the potatoes.
Place the potatoes in a bowl of cold water to remove some of the starch.
Wipe the potatoes dry and place on plate with a paper towels. Sprinkle salt on the potatoes.
Put in the microwave for 2 and a half minutes, you will have to adjust the time based on the thickness of the potatoes and the strength of the microwave.
