Apricot Strawberry salsa brightens up an easy shrimp taco!
Wash and chop the apricot and strawberries into uniform pieces.
Cut the avocado in half. Peel the skin and cut into uniform pieces.
Wash and chop the cilantro and red onions.
Add the apricot, strawberries, avocado cilantro, and red onion into a bowl, Juice the lime into the bowl.
Stir until well incorporated.
Wash, peel and devein the shrimp. (Or purchase frozen peeled shrimp to save time)
Add the olive oil and shrimp to a small pan and cook on medium heat. Cook for about 3-5 minutes on each side or until the shrimp are pink.
Heat up the tortillas on a gas stove to get the char marks. Just 1-2 minutes on each side.
To assemble the tacos add 2-3 shrimp to a tortilla and top with 2 TBSP of salsa!
