Bok Choy Salmon Soba Bowl

simple recipe for a quick weeknight dinner

  • 2 baby bok choy heads
  • 1 cup mushrooms sliced
  • 2 tbsp soy sauce
  • 2 tsp sesame oil
  • 4 oz salmon
  • 3 oz soba noodles


  1. Preheat your ovens broiler setting to high.

  2. Spray a small glass dish with cook spray and add your salmon to the dish. 

  3. In a small pot, boil some water. 

  4. Wash and clean the bok choy and chop off the ends of the stalks. Wash and slice the mushrooms. 

  5. Mix together the soy sauce and sesame oil. 

  6. Spray a large skillet with cooking spray and add the bok choy and mushrooms. Pour half of the soy-sesame mixture. Cook for 8-10 minutes until the bok choy is tender.

  7. Pour the other half of the mixture on the salmon. Cook in the oven on broil for 10-12 minutes until your piece is done. 

  8. When the water boil, drop in the soba noodles. When the noodles are soft, drain the water and pour the noodles into an ice bath. 

  9. Then "wash" your soba noodes. I read this trick on Food52. 

  10. To assemble your dish, place the noodles in a bowl. Add the vegetables and the salmon on top. I remove the salmon skin before placing in the bowl. 

  11. Top generously with sesame seeds.
