Barbecue Jackfruit Quesadilla

Barbecue Jackfruit has the same taste and texture of pulled pork but its vegan! (but don't worry this quesadilla uses real cheese!)

Ingredients

For the jackfruit:

  • 1 can jackfruit in brine
  • 1 medium red onion
  • 1 clove garlic
  • 1/3 cup bbq sauce
  • 1/2 cup water

For the chipotle yogurt sauce:

  • 5 oz non-fat plain yogurt
  • 1 chipotle in adobo
  • 1 lime

For the quesadilla:

  • 2 flour tortilla
  • 1/4 cup cheese
  • pickled onions
  • avocado

Instructions

  1. Make the pickled onions ahead of time 

To make the jackfruit:

  1. Drain the can of jackfruit. Coarsely chop the drained jackfruit. 

  2. Thinly slice the red onion. 

  3. In a skillet at the jackfruit, red onion, garlic, majority of the bbq sauce and water. 

  4. Cook in the the skillet for 20 minutes. 

  5. Preheat the oven to 400 degrees. Add parchment paper to a baking sheet. 

  6. Place the jackfruit mixture on the baking sheet and add the remaining bbq sauce. 

  7. Bake in the oven for 30 minutes. 

To make the chipotle yogurt sauce:

  1. Add the yogurt, chipotle, and lime juice into a small blender. blend until smooth. 

  2. Add salt and pepper to taste. 

To make the quesadilla:

  1. Spray a clean skillet with cooking spray. 

  2. Add one flour tortilla to the skillet. Flip after two minutes. 

  3. Add cheese to the tortilla and add about 1/4 cup of the jackfruit. 

  4. Add the second tortilla on top and flip after 3-5 minutes. 

  5. Cut into 6 triangles. 

  6. Top with avocado, pickled onions, and chipotle yogurt sauce.
