wow your guests with this three ingredient persimmon rose pastry
Defrost the puff pastry. Roll out one sheet.
Spray a six muffin tin with cooking spray.
Cut the puff pastry into 6 1-2inch horizontal strips.
place the persimmon on its side. Slice thin circles.
Cut each of the circles in half, so you have half circles.
Spread jam (I used apricot) on the entire length of each puff pastry.
Place overlapping slices of persimmons down the length of the puff pastry. The flat line of the persimmon should be half way down the puff pasty. The round edge of the persimmon should lay above the edge of puff pastry.
Fold up the bottom half of the puff pastry.
Take on edge of the puff pastry, with the persimmons on the top and the puff pastry fold on the bottom. Carefully roll the entire puff pastry into a circle. Place the puff pastry into a muffin tin.
Repeat with the other 6 strips.
Place in the oven for 45 minutes.
After they are done baking, let cool for 5 minutes before taking them out of the muffin tin.
Sprinkle with confectioners sugar if you wish.
