Four ingredients to an easy weeknight meal.
Preheat the oven to 375 degrees.
Scrub the sweet potato and poke holes. Add the sweet potato directly to then oven tray. Let it roast for 20-30 minutes.
Add the grapes to a sheet pan and add them to them to the oven. Add the thyme sprigs on top of the grapes. Let them roast for 15 minutes or until they start to blister?
When the sweet potato is done (caution it will be hot). Cut it open and mash the inside. Add the goat cheese and grapes. Ass any remaining thyme to the sweet potato.
You can always microwave sweet potatoes. Make sure to poke some holes to let the air out. I often microwave when i am super hungry! it only takes 5 minutes.
