Fig Pistachio & Cashew Granola

  • 2 cups old fashioned rolled oats
  • 1/2 cup cashews
  • 1/4 cup pistachios
  • 1/2 tsp cinnamon
  • 1/2 tsp cardamom
  • 1/4 cup olive oil
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 4 figs sliced


  1. Preheat oven to 350 degrees Fahrenheit. Spray a baking sheet with cooking spray. 

  2. In a large mixing bowl, combine the oats, cashews, pistachios, cinnamon, and cardamon. Stir to blend.

  3. Pour in the oil, maple syrup and and vanilla. Mix well until the mixture is coated. 

  4. Pour the granola onto your pan and spread it in an even layer. Bake until golden, about 22 minutes.

  5. Let the granola cool completely before breaking it up.
