Stuffed Summer Squash with Lemon, Mint and Feta Farro

Cousa and patty pan summer squashes are twice as good stuffed with farro feta lemon and mint.

Ingredients

  • 2 cousa or patty pan squashes
  • Cooking Spray
  • 2 tsbp olive oil
  • salt and pepper to taste
  • 1 tbsp pine nuts
  • 2/3 cup farro
  • 1 1/2 cup vegetable broth
  • 1/4 cup feta
  • 1 tbsp mint
  • 1 lemon juiced

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. 

  2. Cut the top off the squash. With a spoon, scoop out the inside. Save for later. 

  3. Place the squash on a baking sheet sprayed with cooking spray. Drizzle with olive oil, salt, and pepper. Cook in the oven for 30-35 minutes. 

  4. With 8 minutes left, add some pine nuts to the baking sheet to lightly toast. This takes 5-8 minutes.

  5. In a small pot, add the farro and vegetable broth. Cook until broth has dissolved and farro is tender. 10-15 minutes. 

  6. Cut the inside of the squash into cubes.

  7. In a small pan, add a little olive oil and the squash. Cook for 5-8 minutes. 

  8. Chop up the mint. 

  9. Add the mint feta, lemon juice, toasted pine nuts, and squash to the farro. Mix together. 

  10. When the squash is out of the oven, stuff with the farro. I also added a little extra farro to the side of my plate.
