When did smoothie bowls become a thing? Who decided that eating smoothies from a bowl was wayyy cooler than drinking a smoothie from a glass? I mean, from time to time, I am still drinking my smoothies, but overwhelmingly, I am slurping these creations from a bowl. Someone leave a message and tell me why!Peach Raspberry Swirl Smoothie_-3

Peaches and raspberries! What a combination! Has anyone ever had it before? I don’t think I had previously ever thought to combine the two, but boy am I happy I did! It’s really the perfect sweet and sour combination, like natures sour patch kids! Speaking of sour patch kids, who agrees that they are by far the best candy you had growing up!

OK, back to this smoothie bowl, the moral of today’s post is you have to try this combination! But I am certainly waiting on the edge of my seat for answers on the bowl vs. glass debate. I think it has something to do with influence from California (of course) specifically acai bowls. For some reason, acai smoothies have always been served and bowls but now everything is just served in bowls! thoughts?!

Peach Raspberry Swirl Smoothie

Peach and raspberry! What a combination! Both looks and taste!

Ingredients

  • 1 cup frozen peaches
  • 3/4 cup frozen raspberries
  • 1/2 cup nonfat greek yogurt divided
  • 1/4 cup almond milk divided
  • fresh peach slices
  • fresh raspberries
  • 1 tsp edible rose petals

Instructions

  1. In a food processor or blender, add the frozen peaches, 1/4 cup of greek yogurt, and 2 tbsp of almond milk. 

  2. Blend until smooth. 

  3. Pour the peach smoothie into a bowl or glass. 

  4. Rinse and dry the food processor and place back on the stand. 

  5. Add the raspberries and remaining yogurt and almond milk. 

  6. Blend until smooth.

  7. Add the raspberry smoothie to the bowl with the peach smoothie. Swirl around with a spoon if you want a pattern. 

  8. Wash the peach and raspberries. Chop the peaches. 

  9. Top the smoothie bowl with peaches, raspberries, and edible rose petals.

Chia Pudding with Figs & Pistachio

Chia puddings love them or hate them? They are certainly an interesting texture when you get it right, bit also really easy to mess it up. The recipe I am sharing today is my favorite way to do it.

Chia Pudding with Figs & Pistachios

  • Servings: 1

Ingredients

    – 1 tablespoon figs butter (Trader Joes) – 6 oz of non fat plain greek yogurt

  • 1/4 cup milk (skim, soy or almond)
  • 2 TBSP chia seeds
  • 2-3 figs, sliced in 4
  • 6-8 pistachios

Directions

  1. In a bowl, add the yogurt, milk, and chia seeds, Mix until incorporated.
  2. In a glass/bowl add the fig butter to the bottom and spread evenly.
  3. Pour the yogurt mixture into the glass. Place in the fridge overnight of at least 4 hours.
  4. In the morning, top the yogurt with fresh figs and pistachios.
  5. Enjoy!

Black Cherry Greek Yogurt Nutella Popsicles

Who else is mesmerized by the Olympics? I cannot get enough of any and all of the events but especially women’s gymnastics. I see those commercials about kids getting involved in USA Gymnastics and I am like yes sign me up! I want to be an Olympian.

My Olympic dream began in 1996, I was 7 and appropriately, I was obsessed with the Magnificent 7. I begged my mom for the Dominique Moceanu book from the Scholastic Book Fair but definitely didn’t want any part in Kerry Strug’s haircut. I took gym and dance but to be honest gymnastics wasn’t my thing. I lacked upper body strength and overall coordination. I never made it past the standing back bend.

Since Chobani fuels the US Olympic team, I thought it was quite fitting to share a Chobani based recipe. And this recipe only has 2 ingredients which is perfect since if you are like me all your time is consumed with watching as many events as you can.

Black Cherry Greek Yogurt Nutella Popsicles

  • Servings: 4-6 popsicles

The easiest two ingredient Popsicle!

Ingredients

  • 4-6 6oz Chobani Black Cherry Greek Yogurts
  • 8-18 tsp of Nutella or Trader Joes Cocoa Almond Spread

Directions

  1. Each Popsicle uses about 1 6oz cup of yogurt and 2-3 tsp of Nutella. Depending on how many Popsicles you would like to make depends on the amount of yogurt and Nutella you will need.
  2. Make sure to mix the yogurt cup to evenly spread the black cherry on the bottom.
  3. Layer the Popsicle molds with yogurt and teaspoons of Nutella. There is really no science to this just do what looks good to you!
  4. Fill the mold to the top and place them in the freezer overnight.
  5. To remove the Popsicle from the mold, run under hot water for a few minutes.

Watermelon Pizza

Watermelon pizzas are popping up everywhere on instagram and even Target’s newest commercial features one! So naturally I wanted to join in on the fun! You can make both savory and sweet watermelon pizzas, but today I am sharing one with fruit fruit and more fruit and I loved it! It’s the perfect every night dessert that can be personalized to your liking which is my favorite kind of recipe!

Watermelon Pizza

  • Servings: 4 slices

because everyone's doing it

Ingredients

  • 1 thick slice of watermelon (full circle)
  • 1/2 cup plain non-fat greek yogurt
  • 1 peach, sliced
  • 1/2 cup raspberries
  • 1/2 cup blueberries
  • – 1 tsp honey

Directions

  1. Slice a thick round piece of watermelon
  2. Spread yogurt on watermelon covering all the pink
  3. Top the yogurt with peach slices, raspberries, and blueberries
  4. Drizzle 1 tsp honey over the watermelon.
  5. Slice into fours.
  6. Enjoy!

Zucchini Feta Chickpea Burger

When it comes to veggies burger’s don’t judge a book by its cover. No matter how hard I try, I always have a lot of trouble keeping my patties from crumbling apart. That being said, regardless how it looks, I promise these ones taste awesome!

Zucchini, feta, and chickpeas are just the perfect combination. These veggie burgers have a real Mediterranean flair with a creamy tahini sauce adding a real depth of flavor. These burgers are a match made in veggie Mediterranean heaven!

And in case you are wondering, you can never have too much zucchini! Serve your burgers with yesterday’s zucchini fries!

Zucchini Feta Chickpea Burger

  • Servings: 4 Burgers

Ingredients

  • 1 1/4 chickpeas
  • 3/4 cup of zucchini, chopped
  • 1 egg
  • 2 oz of feta
  • 1/2 cup seasoned breadcrumbs
  • 2 TBSP whole wheat flour
  • 1 clove garlic, minced
  • 1 shallot, finely chopped
  • cooking spray
  • handful of arugula
  • 4 whole wheat buns
  • For the lemon tahini sauce:

  • 1/2 a lemon, juiced
  • 1 TBSP tahini
  • 2 tsp water
  • 1 clove garlic, minced
  • 1 TBSP plain non fat yogurt

Directions

  1. Add the chickpeas to a food processor, pulse until the chickpeas resemble a paste.
  2. Pour the chickpea paste into a large bowl.
  3. Whisk the egg.
  4. Add the zucchini, feta, egg, bread crumbs, whole wheat flour, garlic, and
  5. Put the mixture in the refrigerator for 1 hour.
  6. To make the sauce, add the lemon juice, tahini, water, garlic and yogurt into a small bow. Whisk until well combined.
  7. Form the mixture into 4 large patties.
  8. Spray a large skillet with cooking spray
  9. Turn the burner on medium. Cook the patties for 4 minutes on each side.
  10. Toast the buns in a toaster oven on low.
  11. To assemble the patties, spread the lemon tahini sauce on the buns. Add arugula on top of the sauce. Place a patty on top of the arugula. Top the patty with the top bun.
  12. Enjoy warm!

The patties also make a great addition to a salad. I added a leftover patty to a bed of arugula and used the sauce as a dressing. It was delicious!

Blueberry Ombre Smoothie

Layered smoothies have been taking over instagram this summer, so naturally i had to join in on the fun! I wanted to stick with my theme this week so today I am sharing a blueberry ombre smoothie. By changing the ratio of blueberry to yogurt I have changed the color (and texture) of different layers.

It has been so so hot in DC this week! Making a smoothie is truly the only way to get through it! Smoothies are a great make ahead breakfast or snack that can be enjoyed all week long. Definitely use plain unsweetened yogurt in this recipe! It’s plenty sweet without the added sugar. I highly recommend making a few smoothies ahead of time to ensure delicious healthy breakfast/snacks all week!
