Green smoothies these days! They make even a nutrition focused veggie lover scratch her head. Cauliflower? Zucchini? Cabbage? I guess I just don’t understand! I don’t want to yuck other’s yum’s but for now I prefer my cauliflower roasted and my zucchini in noddle form!

However, green smoothies in general, those that include a cup of leafy greens, like spinach or kale  and lots of fruit, in my opinion are a great way to add some extra veggies to your breakfast or a snack. Adding just 1 cup of spinach, like I did in the Green Mango Smoothie, doesn’t change the taste one bit!

Green Mango Smoothie

you cannot taste the spinach in this mango, kiwi smoothie, I promise! 

Prep Time 15 minutes
Total Time 15 minutes
Servings 1 serving

Ingredients

  • 1 cup spinach
  • 1 cup frozen mango
  • 2 kiwi's skin removed
  • 1/2 cup almond milk
  • 1 tbsp chia seeds

Instructions

  1. In a food processor add the spinach, mango, kiwi, almond milk, and chia seeds. Blend until smooth. 

  2. To serve, top with more kiwi, blueberries and chia seeds (optional).

Cherry Blueberry Salsa & Swordfish

Taking the vibrant colors I was talking about the other day to the next level today by adding purple potatoes! Growing up my favorite color was always purple so this dish reminds me of my purple painted walls in my bedroom.

Cherry Blueberry Salsa 4

Cherry Blueberry Salsa & Swordfish

  • Servings: 1 serving
  • Print

Purple Power

Ingredients

  • 1 4-6 oz piece of swordfish
  • juice of 1 lemon
  • 3-4 small purple potatoes
  • 1 pat of salted butter
  • 1 serving of cherry blueberry salsa

Directions

  1. Preheat the oven to 350 degrees.
  2. Spray a glass pyrex dish with cooking spray.
  3. Place the swordfish in the pan.
  4. Pour the lemon juice over the swordfish.
  5. Place in the oven for 15-20 minutes, the internal temperature should be 145 degrees.
  6. Meanwhile, scrub the potatoes and poke holes.
  7. Bring a pot of water to a boil, and place the potatoes into the pot. Cook for about 10 minutes.
  8. Drain the water from the pot. Use a fork to match the potatoes. Add the pat of butter.
  9. To assemble the dish, add potatoes to plate and place the piece of swordfish on top. Add the cherry blueberry salsa on top of the fish.
  10. Enjoy warm.

Cherry Blueberry Fruit Salsa

  • Servings: 2-4

summer fruit salsas just make me happy

Ingredients

    – 1 cup cherries, pits removed – 1 cup blueberries,

  • 2 TBSP red onion
  • 1/4 cup cilantro, chopped
  • 2 limes, juiced

Directions

  1. Remove pits from cherries.
  2. Add cherries, blueberries, red onion and cilantro to a bowl.
  3. Juice the two limes.
  4. Pour the lime juice over the fruit and mix together until incorporated.
  5. Serve with (tomorrow’s recipe!)

Cherry Acai Bowl

Acai has been praised has a superfood, packed with antioxidants, polyphenols, and flavanoids. However, Acai has been found to have no more nutritional benefits than similar fruits like blueberries. Acai do however have mono and polyunsaturated fats which makes them more filling than traditional fruits. And regardless of all that they are delicious!

Acai is perfect to continue to celebrate the Rio Olympics because the berry is harvested from the rain forests of Brazil and is unique to that habitat. I heard they even have an Acai bowl station at the Olympics!

I first had an Acai bowl when I visited San Diego and fell in love with the delicious flavor (and eating outside in February). Slowly but surely, Acai bowls made their way to the east coast and now you can find Acai frozen packets at the grocery store! So now you make your very own Acai bowl no matter where you live! I served mine in a hollowed out watermelon after all my watermelon recipes!

Cherry Acai Bowl

Summer in a bowl!

Ingredients

  • 1 packet of Sambazon Acai (100g)
  • 1 cup frozen cherries
  • 1/4 cup of vanilla soy milk
  • fruit for topping, (cherries, blueberries, strawberries, raspberries)
  • empty watermelon rind

Directions

  1. Run the acai packet under warm water, until the acai breaks up a little.
  2. Add the acai, frozen cherries, and soy milk into a blender/food processor. Pulse until smooth.
  3. Pour into a bowl.
  4. Add fruit as you wish!

I used these individual packets from Sambazon and found them at Yes! Organic Markets!

Watermelon Rosé Popsicles

Last year, a bar in NYC started serving popsicles in their prosecco & Rosé. Naturally I needed to try it. But since I was not in New York, I decided it was easy enough to make myself. And it was delicious.

This year I took it up a notch, and added some Rosé directly into my popsicles. And as expected, it was  amazing!

Watermelon Rose Popsicles

  • Servings: 4 popsicles

Watermelon Rose Popsicles for days when you just cant choose!

Ingredients

  • 1/2 small seedless watermelon, juiced
  • 1/2 cup rose
  • 1/4 cup blueberries
  • 4 lime slices

Directions

  1. Cut or scoop out the watermelon flesh into a blender or food processor. Blend until the watermelon becomes liquid.
  2. Pour the juice into bowl or large glass. Add the rose. Mix gently.
  3. Pour the mix into popsicle molds, should make about 4.
  4. Add blueberries and a lime slice to each of the mold. Make sure the mold are filled to the top.
  5. Cover the mold and freeze overnight!
  6. Enjoy

Watermelon Pizza

Watermelon pizzas are popping up everywhere on instagram and even Target’s newest commercial features one! So naturally I wanted to join in on the fun! You can make both savory and sweet watermelon pizzas, but today I am sharing one with fruit fruit and more fruit and I loved it! It’s the perfect every night dessert that can be personalized to your liking which is my favorite kind of recipe!

Watermelon Pizza

  • Servings: 4 slices

because everyone's doing it

Ingredients

  • 1 thick slice of watermelon (full circle)
  • 1/2 cup plain non-fat greek yogurt
  • 1 peach, sliced
  • 1/2 cup raspberries
  • 1/2 cup blueberries
  • – 1 tsp honey

Directions

  1. Slice a thick round piece of watermelon
  2. Spread yogurt on watermelon covering all the pink
  3. Top the yogurt with peach slices, raspberries, and blueberries
  4. Drizzle 1 tsp honey over the watermelon.
  5. Slice into fours.
  6. Enjoy!

Mini Blueberry Crisp

Can you ever have one slice of pie?

 

blueberry crisp (1 of 1)-4Now I have just changed the game! Make these mini crisps in individual sized ramekins and you don’t have to worry. This recipe can easily be halved so that you really only have 1 serving but it can also be doubled or tripled and you can serve all of your guests their own mini crisp. Win Win in my book.

And the smaller size dish cuts the cook time in half!

Mini Blueberry Crisp

  • Servings: 2 individual pies
  • Print

So you don’t have to share.

Ingredients

  • Cooking Spray
  • 2 tsp cornstarch
  • 1/4 cup of old fashioned oats
  • 2 TBSP brown sugar
  • 2 TBSP AP flour
  • 2 TBSP chilled butter, cubed
  • pinch of salt

Directions

  1. Preheat the oven to 350 degrees.
  2. Coat two small/medium ramekins with cooking spray
  3. Coat the blueberries with cornstarch and place 1/2 cup of blueberries in each ramekin.
  4. In a small bowl, add the remaining ingredients. Mix with a fork until the butter is well combined.
  5. Pour half of the mixture into each of the ramekins.
  6. Place a cookie sheet on the bottom rack of the oven. Place the two ramekins on the middle shelf of the oven. The cookie sheet will catch anything that spills over the sides of the ramekins.
  7. Cook in the oven for 30-35 minutes until the crisp is lightly browned.
  8. Enjoy warm! And with a scoop of vanilla ice cream!

Blueberry Ombre Smoothie

Layered smoothies have been taking over instagram this summer, so naturally i had to join in on the fun! I wanted to stick with my theme this week so today I am sharing a blueberry ombre smoothie. By changing the ratio of blueberry to yogurt I have changed the color (and texture) of different layers.

It has been so so hot in DC this week! Making a smoothie is truly the only way to get through it! Smoothies are a great make ahead breakfast or snack that can be enjoyed all week long. Definitely use plain unsweetened yogurt in this recipe! It’s plenty sweet without the added sugar. I highly recommend making a few smoothies ahead of time to ensure delicious healthy breakfast/snacks all week!

Red, White, & Blueberry Pancakes

The perfect pancakes for July 4th or Memorial Day or Labor Day! Hey even flag day or any day your feeling patriotic. You could eat them on Bastille Day too! and don’t forget National Strawberry Day (February 27th) or National Blueberry Pancake Day (January 28th).

But actually can someone tell me why national strawberry day and national blueberry pancake day are during the winter! that makes no sense! But hey mark your calendar now because don’t you just hate when you look on instagram and its national “insert food day” and you’re like ugh I don’t have that food at home.. do i have time to run to the store to buy it and make something and then take a picture before the day is over?!! I know I am not the only one…right!

I used buttermilk in these pancakes because I had plenty left over from this Apricot Galette recipe from last week. If you don’t have any buttermilk you can also make my Raspberry Chocolate Chip Pancakes from Valentine’s Day. (I guess i like to celebrate national holiday’s with pancakes!) Just swap strawberries and blueberries for raspberry and white chocolate chips for chocolate chips. Just be careful about how many white chocolate chips you use because they are very sweet. Too  many white chocolate chips will ruin your pancakes.

Blueberry, Feta & Mint Salad with Salmon

Are you surprised? The first blueberry recipe I am sharing is a salad. But this isn’t just any salad. It’s a salad packed with antioxidants and protein and heart healthy omega 3s. And it’s a salad packed with unique flavor. The sweetness of blueberries is matched with the saltiness of feta and the mint just adds a unique twist. I dressed this salad with a homemade honey lime vinaigrette that brings everything together!
