This is the perfect make ahead brunch dish. You can make prep this the night before, stick in the fridge and then place it in the oven 45 minutes before your guests arrive. It’s really a  win-win for you and everyone that gets to eat it!

Nectarine & Berry Baked Challah French Toast

all the best ingredients, challah, nectarines, strawberries, cherries, and a crumb topping make this French toast one of the bests! 

Ingredients

  • 1/2 loaf Challah
  • 2 eggs
  • 2 egg whites
  • 1/2 cup skim milk
  • 1 tsp vanilla
  • 1 nectarine chopped
  • 1 cup strawberries
  • 1/2 cup cherries
  • 3 tbsp brown sugar
  • 3 tbsp flour
  • 2 tbsp butter cubed
  • 1 tsp cinnamon

Instructions

  1. Spray a small baking dish (xxx) with nonstick spray. 

  2. Cut the challah in half. Put half away. Cut the remaining half into thick slices and then into cubes about 1 inch. 

  3. Whisk together the eggs, egg whites, skim milk, and vanilla in a large bowl. 

  4. Add the cubes of bread to the bowl and toss until all pieces are soaked. 

  5. Add the bread to the prepared baking dish. 

  6. Chop the nectarines, strawberries and cherries. You can use fresh or frozen. If you use frozen run the fruit under warm water to defrost before cutting as needed. 

  7. Add the fruit evenly to the baking dish.

  8. Refrigerate for 3 hours or overnight. 

For cooking:

  1. Preheat the oven to 350 degrees/ 

  2. Add the brown sugar, flour, cold butter cubes, and cinnamon to a small bowl. 

  3. Use a pastry cutter to mix together the ingredients. 

  4. Add the crumb topping to the dish. 

  5. Bake in the oven for 35-45 minutes.

Substitutions:

  • Fruit: make this dish with any fresh or frozen fruit you have on hand!
  • Milk: make this dish dairy-free by subbing skim milk with a non-dairy alternative
