Raspberry Blueberry Eton Mess

I guess we are sticking with the British theme this week. Have you ever had an Eton Mess? The name is believed to date back to 1893 where it was served at Eton college. It’s really the perfect quick summer dessert as it doesn’t really require turning the oven. I heated some frozen berries on the stove for a few minutes, but it was not enough to make the apartment hot. Another shortcut that I took, buying store bought meringues. So now were talking about a 15 minute dessert, maybe its a but too easy! I call that dangerous!

Raspberry Blueberry Eton Mess

the perfect summer dessert to whip up when you are short on time! 

Prep Time 15 minutes
Servings 4

Ingredients

  • 1 package whipping cream
  • 10 oz frozen raspberries
  • 6 oz frozen blueberries
  • 2 tsp sugar
  • 4-6 meringues
  • 4 oz fresh raspberries
  • 4 oz fresh blueberries

Instructions

  1. Whip the whipping cream with a stand or hand mixer until stiff peaks form. 

  2. Add the frozen raspberries and blueberries to a small pot on medium heat. Add the sugar. Stir together until the frozen raspberries become a sauce. 

  3. Crush the meringues. 

  4. Put together the ingredients. Start with a layer of raspberry blueberry sauce, followed by whipped cream and meringues. Add fresh fruit on top! 

Recipe Notes

for the whipping cream, I used the shelf stable version from trader joes. 

for the meringues, I bought store bought meringues from trader joes

Substitutions:

  • I think you can make this with just about any fruit. Peaches, cherries you name it! And maybe for the fall apples, pears, and cinnamon? Yum!
