I bet you won’t believe how I became the owner of a new waffle maker….
I know the suspense is killing you. Well, here it is… I won my families March Madness pool! My sister really wanted an airfryer and I have really wanted a waffle maker so the winner got their appliance of choice! and I won! And I don’t know much about basketball, and also had UVA winning it all. (In case you forgot, the lost in the first round to a 16 seed). I guess that tells you a lot about my family’s skill in basketball statistics.
And although I did make regular waffles for my first recipe with my waffle maker, I am most excited about creating hash brown waffles, topped with eggs and avocado, ok, I am drooling about them now. But enough of hash browns and back to the current waffle recipe.
This would be a perfect addition to your mother’s day brunch. The addition of strawberries, kiwis, and mango’s will make these waffle a true stunner on your table!
Whole Wheat Waffles with Kiwi, Strawberries, and Mango
Ingredients
- 1 cup whole wheat flour
- 1 cup white flour
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 2 eggs
- 6 tbsp melted butter
- 1 3/4 cup low-fat buttermilk
- 2 tsp vanilla extract
- 1 cup strawberries
- 2 kiwis
- 1 champagne mango
- maple syrup
Instructions

Preheat the waffle maker. I used setting 4.

Whisk the flour, baking powder, cinnamon, and salt together in a large bowl.

Stir together the remaining ingredients in a medium bowl until combined.

Pour the wet ingredients into the dry ingredients and whisk until combined.

I have a smaller waffle maker, so I used a small cookie scoop and place a small scoop of batter in each quadrant, this worked perfectly!

Slice the strawberries, kiwis, and mangoes.

Serve with the fruit on top and maple syrup.
Recipe Notes
Can use 2 cups of whole wheat flour as well.

Substitutions:
- Flour: you can definitely sub two cups of whole wheat or vice versa if you are totally against whole wheat flour. I haven’t tested this recipe with any other flour
- Fruit: This recipe is a blank slate, add in any fruits or toppings your heart desires!
