Even though Cinco de Mayo was last weekend, I don’t need an excuse to eat salsa, tacos, or margaritas. Lately, my favorite way salsa include fruit and avocado and today’s recipe is no different.
But the even more exciting news is I discovered you can make chips in the microwave, in under 3 minutes, with just potatoes! What could be better than that!
Kiwi Avocado Mango Salsa
there is never a bad time of year to eat chips and salsa!
Ingredients
- 2 kiwis
- 1 champagne mango
- 1 small avocado
- 2 tbsp red onions
- 1 lime
- 3 purple potatoes
- salt
- pepper
Instructions

Peel the skin off the kiwi. Dice into small pieces.

Cut the mango and slice into small pieces.

Dice a small avocado.

Dice a red onion into 2 TBSP.

Add the first four ingredients to a bowl. Squeeze the juice of the lime into the bowl and mix well. Place in the fridge while you make the chips.

Wash the potatoes. Use a mandolin on the second setting to thinly slice the potatoes.

Place the potatoes in a bowl of cold water to remove some of the starch.

Wipe the potatoes dry and place on plate with a paper towels. Sprinkle salt on the potatoes.

Put in the microwave for 2 and a half minutes, you will have to adjust the time based on the thickness of the potatoes and the strength of the microwave.
