I am so excited to by participating Margarita Week this year hosted by Kate Ramos of Hola Jalapeno. I must have signed up last year and totally forgot about it, but when the email invitation hit my inbox last month, I just couldn’t wait. As with all of these fun collaborations, I always try to incorporate the featured ingredient on my blog with the theme of the collaboration. And with kiwi, it couldn’t have been an easier or more delicious match!

Kiwi Margarita
this tart fruit is a perfect way to step up your cinco de mayo game!
Ingredients
- 1/4 cup sugar
- 1/2 cup water
- 6 oz tequila
- 2 limes
- 4-8 oz seltzer
Instructions
For the kiwi simple syrup

Peel 3 kiwis and place in a food processor. Pulse until the kiwis become a thick juice substance.

Add the kiwi juice, sugar and water to a small pot. Stir until the liquid evaporates and the kiwi becomes more of a syrup.
For the margarita

Add 1 1/2 oz of tequila to a glass (or live on the wild side and estimate!)

Add 1 1/2 oz of the kiwi simple syrup, the juice of half a lime and 1-2 oz seltzer. Stir well.

Garnish with extra kiwi (although it doesn't really float)
Recipe Notes
I'm not really a fan of salt on the rim, but by all means, salt your rims if you are a fan!
