In January, and all year round, everyone is always looking for quick and easy dinners that taste great and are even better for you!
One easy way to simplify dinner is cook everything on one sheet pan! It simplifies the cooking and cleaning process! Anyone else also detest cleaning!

Blood Orange Salmon Sheet Pan Dinner
a quick and easy weeknight dinner made on all sheet pan.
Ingredients
- 1 large beet
- 1 cup brussels sprouts
- 2 tsp olive oil divided
- 8 oz salmon
- 2 slices blood orange
- 1/4 cup cilantro
- 1/4 cup parsley
Instructions

Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.

Peel the skin of the beet. Chop into even cubes

Clean and slice the Brussels sprouts.

Toss in one tsp of olive oil.

Spread on a baking sheet and cook for 25 minutes.

Chop the parsley and cilantro. Place in a small bowl and add 1 tsp of olive oil.

Slice 2 thin slices of blood orange. Squeeze the other half of the blood orange into the herb mixture.

Spread the herb mixture on the salmon. Place the two orange slices on top of the salmon.

Take the veggies out of the oven, flip them. Push them over to make room for the salmon. Add the salmon to the sheet pan.

Cook for 12 minutes until your preference for doneness.

- Blood Orange: If you can’t find a blood orange, any citrus, orange or lemons works well in this recipe!
- Veggies: Beets and Brussels not your favorite? Swap for carrots, cauliflower, or broccoli
