Apple rose pastries were trending throughout my Instagram feed last year. This year, I am reviving this easy pastry by adding persimmons to the mix.

Persimmons are a beloved holiday fruit, but pretty difficult to find on the east coast, due to a short fleeting season. However, I was in LA for part of Thanksgiving this year and it seemed that nearly every farmers market vendor had an over abundance. But if you are in the DC area, Green Grocer DC carries them this time of year!

This recipe only takes 3 ingredients: Persimmons, Puff Pastry, and some type of jam/jelly. You will be shocked at how easy it is to make them and its a perfect way to show off your skills this holiday season.

wow your guests with this three ingredient persimmon rose pastry 

Ingredients

  • 1 sheet puff pastry
  • 2 persimmons
  • apricot jam

Optional:

  • confectioners sugar

Instructions

  1. Defrost the puff pastry. Roll out one sheet. 

  2. Spray a six muffin tin with cooking spray. 

  3. Cut the puff pastry into 6 1-2inch horizontal strips.

  4. place the persimmon on its side. Slice thin circles. 

  5. Cut each of the circles in half, so you have half circles. 

  6. Spread jam (I used apricot) on the entire length of each puff pastry. 

  7. Place overlapping slices of persimmons down the length of the puff pastry. The flat line of the persimmon should be half way down the puff pasty. The round edge of the persimmon should lay above the edge of puff pastry. 

  8. Fold up the bottom half of the puff pastry. 

  9. Take on edge of the puff pastry, with the persimmons on the top and the puff pastry fold on the bottom. Carefully roll the entire puff pastry into a circle. Place the puff pastry into a muffin tin. 

  10. Repeat with the other 6 strips. 

  11. Place in the oven for 45 minutes. 

  12. After they are done baking, let cool for 5 minutes before taking them out of the muffin tin. 

  13. Sprinkle with confectioners sugar if you wish.
