This week is full of fun food parties! On Monday I participated in the Virtual Pumpkin Party, check out my contribution for Seasonal Pumpkin Burrata and today is all about apples (and purple potatoes) with #AisforalltheApples.
For this apple party, I created an Apple & Purple Potato Pizza. Yes, you heard that right! Apples and Potatoes on pizza. I got this idea from a restaurant in my old neighborhood in Boston. It was the first time I had tired potatoes on pizza and I have loved it ever since! As you know, I am little unconventional when it comes to pizza, but I can’t say no to bread and cheese! This recipes is very balanced with the sweet apples and caramelized onions and salty mashed potatoes and cheese. Try just to have one piece!

Apple & Potato Pizza
Apples and Potatoes is the perfect sweet and salty combinations we are always looking for!
Ingredients
- 3 small purple potatoes
- 3 tsp olive oil divided
- 1/2 red onion thinly sliced
- 1 herbed pizza dough
- 2 cloves garlic minced
- 4 oz fontina cheese shredded
- 1 apple
- 2 tsp butter
- 6 sprigs sage
- 1 scallion chopped
Instructions

Preheat the oven 425 degrees Fahrenheit.

In a medium pot, bring water to a boil.

Wash and pierce potatoes and add to the boiling water. Cook for 15 minutes.

Meanwhile, add 1 tsp of olive oil to a medium skillet.

Thinly slice the red onion and add to the skillet. Cook on low for about 8 minutes.

Roll out the pizza dough. Spray a sheet pan and place the dough on it.

In a small bowl, add 2 tsp of olive oil and the minced garlic cloves. Mix them together and then pour the mixture on the dough.

Shred 4 oz of fontina cheese and add it to the pizza.

Use a mandolin to thinly slice the apple and arrange on top of the pizza.

Add the caramelized onions to the pizza.

Drain the water from the potatoes. Add the butter and a pinch of salt and mash together.

Add the mashed potatoes to the pizza.

Put the pizza in the oven for about 10 minutes.

Meanwhile, in the same skillet that you cooked the onions, add the sage sprigs. Cook for a couple minutes until they are crisp.

Finely chop the scallion.

When you take the pizza out of the oven, sprinkle the crispy sage and scallions on top.
Recipe Notes
When I am short on time, which is always, I like to buy ready to cook dough at Trader Joes.
