It’s the most wonderful time of the year!
Fig Season! Figs are so pretty, so delicious, and so fleeting on the east coast. We can barely find fresh figs for more than 2 weeks here! So note to self: always buy fresh figs whenever you see them at the farmers market.
One of the great things about this recipe is you actually don’t need fresh figs at all! You could just as easily use dried figs. If you are using dried figs, you should add the figs after you have cooked the rest of the mixture.

Fig Pistachio & Cashew Granola
Use fresh or dried figs in this recipes to enjoy all year long
Ingredients
- 2 cups old fashioned rolled oats
- 1/2 cup cashews
- 1/4 cup pistachios
- 1/2 tsp cinnamon
- 1/2 tsp cardamom
- 1/4 cup olive oil
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 4 figs sliced
Instructions

Preheat oven to 350 degrees Fahrenheit. Spray a baking sheet with cooking spray.

In a large mixing bowl, combine the oats, cashews, pistachios, cinnamon, and cardamon. Stir to blend.

Pour in the oil, maple syrup and and vanilla. Mix well until the mixture is coated.

Pour the granola onto your pan and spread it in an even layer. Bake until golden, about 22 minutes.

Let the granola cool completely before breaking it up.
