Featured Ingredient: Summer Squash

We all know about zucchini and yellow summer squash but did you know there are many more types of summer squash! I have found all these at my local farmers market in DC.

Patty pan squash: Sometimes called “UFO squash,” pattypan squash includes any of several related colors and sizes of what’s called a scalloped squash. It’s shaped roughly like a flying saucer, with scalloped sides.

Zephyr Squash: Recognized by its two-tone coloration: light green on the bottom and yellow on top.

Cousa Squash: Pale, speckled green, a little more bulbous than zucchini but with the same basic shape, cousa is an excellent squash most often found in Middle Eastern cuisines.

  1. Summer squash is a good source of the carotenoids, zeaxanthin and lutein, which are protective of eye health.
  2. Summer squash is also a good source of the vitamins copper and manganese

Unfortunately, it’s also a lot less studied in terms of nutritional benefits.
