On a day when you just have to eat a burger, why not just go all in from the start.
These Crispy Quinoa Black Bean Breakfast Burgers (say that three times fast) are a perfect way to start your July 4th (and really any weekend morning). They have everything I love about brunch, fried eggs, avocado, potatoes, cheese, bread, all packaged into a delicious (and may I add healthy) burger! There is nothing more that you need.
On a side note, does anyone else find it quite difficult to shoot burger photos. I don’t know why I a never that happy with any of my pictures (including these) but this recipe is seriously so good I didn’t want to keep it from you!
Crispy Quinoa Black Bean Breakfast Burgers
Everything you love about breakfast packed into a burger!
Ingredients
For the burgers
- 3/4 cup dry quinoa
- 1 1/4 cups black beans
- 1/2 cup panko bread crumbs
- 1 egg
- 1 clove garlic minced
- 1/2 cup shredded mozzarella
- 2 tsp olive oil
For the toppings
- 4 buns
- 3 small sweet potatoes
- 4 oz gruyere cheese
- 1 avocado
Instructions

Cook the quinoa according to instructions.

Separate the black beans into 3/4 and 1/2 portions. Take the 1/2 cup of black beans and pulverize in a food processor until you have a paste.

In a large bowl, Add the quinoa, both beans, panko, egg, minced garlic, and shredded mozzarella. Mix all the ingredients until they are combined, but do not over mix.

With your hands form 4-5 patties. I make mine about the size of my palm.

Add olive oil to a large skillet and place down as many patties that fit. Be sure to leave enough room to flip.

Flip the patties after 5-8 minutes. And cook for another 5-8 minutes. Patties should be brown on either side.

Add your Gruyere cheese to the second side of the patty. One oz per burger. Cook for another minute or two.

Preheat the oven to 350 degrees Fahrenheit.

Spiralize 2 large or 3 small sweet potatoes. Lightly coat in 1 tsp of olive oil

Add the sweet potatoes to a baking sheet and cook for 15-20 minutes.
To assemble the burgers:

Toast your buns until they are lightly browned.

Fry your eggs to your liking.

Add the burger to the bottom bun. Add Your avocado, sweet potatoes and fried egg on top. Press down on the top bun and watch the egg ooze out!
