I am bringing back and oldie but a goodie for the #strawberriesarethejam collaboration today! I am so excited to participating in my third collaboration. The timing for this one made it a bit too difficult to create a new recipe as I just got back from a work trip and then moved. I can’t find anything in my kitchen to eat let alone create and photograph a new recipe. Not to mention that for those of us on the east coast, it’s definitely not strawberry season. It is way to cold! So all that being said, you definitely should not overlook this recipe for Shrimp Tacos with Apricot Strawberry Salsa.
Also, in case you forgot…it’s almost cinco de mayo! You should definitely serve these for any party you are planning!
Shrimp Tacos with Apricot Strawberry Salsa
Apricot Strawberry salsa brightens up an easy shrimp taco!
- 8-12 large shrimp
- 2 tsp olive oil
- 4 corn tortillas
For the strawberry apricot salsa
- 2 apricots
- 1 cup strawberries
- 1/2 large avocado
- 1 lime juiced
- 2 tbsp cilantro
- 2 tbsp red onion
To make the Strawberry Apricot Salsa:
Wash and chop the apricot and strawberries into uniform pieces.
Cut the avocado in half. Peel the skin and cut into uniform pieces.
Wash and chop the cilantro and red onions.
Add the apricot, strawberries, avocado cilantro, and red onion into a bowl, Juice the lime into the bowl.
Stir until well incorporated.
To make the tacos:
Wash, peel and devein the shrimp. (Or purchase frozen peeled shrimp to save time)
Add the olive oil and shrimp to a small pan and cook on medium heat. Cook for about 3-5 minutes on each side or until the shrimp are pink.
Heat up the tortillas on a gas stove to get the char marks. Just 1-2 minutes on each side.
To assemble the tacos add 2-3 shrimp to a tortilla and top with 2 TBSP of salsa!
