There’s a new lettuce wrap in town. Swiss Chard with its large leafy greens truly makes the perfect wrap for a mushroom medley.
If you read my post yesterday, you may have been surprised that I said you cannot eat the beautiful stems of rainbow swiss chard. I have gotten a lot of questions about this. You can eat them if you want, the thing is that the rainbow variety of swiss chard has very bitter stems. Even if you cook them, they honestly don’t taste good. And you can trust me on this, I tried them. You can see in these pictures. I cooked the stems with the mushrooms, but I really didn’t like them, so i wrote the recipe without it.
Also speaking of stems, the stems of shitake mushrooms are also not too tasty to eat!
Even though I do have a degree in nutrition, you don’t necessarily learn specifics about cooking vegetables in your nutrition classes. So I am always looking for good sources about cooking vegetables, what are yours?
