but seriously isn’t this sandwich drool worthy.
Let me just warn you upfront-this was quite messy to make and involved pushing blackberries back into the sandwich over and over again. But trust me it was well worth it!
If you have been reading my blog for some time, you know i like to create healthy recipes that meet a set of nutrition guidance. This recipe is going to be a little above this guidance namely due to the added sugar in jam. If you plan on making this for lunch or dinner, just try to choose other foods that are lower in sugar throughout the rest of the day.
Stop staring already and go make it!
Apricot Blackberry Brie Grilled Cheese
Summer grilled cheese? yes please!
Ingredients
- 2 slices sourdough, cut thick
- 1 tbsp apricot jam
- 1 oz brie
- 1/2 apricot
- 1/4 cup blackberries
- 1 handful arugula
- Cook spray
Instructions

Lightly toast two slices of bread.

Spread jam on both sides of the bread.

Add brie, apricots, and blackberries to one piece of bread.

Spray a pan with cooking spray but both pieces of bread on the pan. One with the cheese/fruit, one without.

After 3-4 minutes, add the top slice of bread to the sandwich.

Use a spatula to press down on the sandwich to help the cheese melt.

After 3-4 minutes, very gingerly, flip the sandwich.

Cook for another 3-4 minutes.

Stuff in some Arugula.

Slice in half and enjoy the ooey gooey cheese.

I love fruit with Brie, why have I never thought of putting them together in a sandwich, genius!
